A 45 hour aerobic fermentation before drying is a critical step that enhances the coffee’s flavor profile. This controlled fermentation carried out by Cesar highlights the intrinsic flavors of the coffee, resulting in a cup that is rich and deeply connected to its origin. ​ You can expect intense sweetness and exotic notes like lychee, apricot, and persimmon from the cup. *Although we make every attempt to have seasonal coffee available to order, occasionally some products are not available to ship immediately because we are in the process of hand-roasting them.* The roastery dispatch web orders via Royal Mail.
