Ango has been making a deliberate shift away from monoculture farming such as growing tomatoes toward coffee cultivation, while also planting native forest trees to restore and enrich the local ecosystem. Ango hand-picks only fully ripe coffee cherries, which are then processed using the Washed process a process that is simple yet demands great attention to detail. The ripe cherries are floated and soaked overnight, then hulled and fermented in their mucilage for another 2 days to develop clean, complex flavors and to allow the mucilage to be removed more easily. The beans are then thoroughly washed clean and dried to the desired moisture level. This coffee shows a cup that is clean and vibrant, evoking pomelo, star fruit, sugarcane, and tea.
