Overview This blend is named for Aldo Leopold, a revered ecologist and author. It is a coffee we roast a bit longer than our other offerings, with the goal of muting acidity, accentuating mouthfeel, and caramelizing sugars. Aldo's is roasted for our loyal supporters who are nostalgic for flavors reminiscent of the classic diner coffee - strong, rich, bold. It’s currently comprised of the following: 50% FAF Curupira - We source a handful of coffees through our partners in Brazil, Fazenda Ambiental Fortaleza (FAF), for use in Aldo's throughout the year. These are generally lower scoring compilations from the same farmers that we purchase top quality microlots. 50% Estrellas de Cajamarca: a washed processed coffee from a compilation of families throughout Cajamarca, Peru.
